In this intimate, hands-on class, you’ll learn how to make croissant dough from scratch and transform it into three eye-catching bicolor pastries: buttery croissants, pains au chocolat filled with rich chocolate and raisin rolls layered with vanilla pastry cream. Along the way, she shares the stories, history and little cultural details behind these French classics, turning the experience into something far more memorable than just following a recipe.

In this hands-on experience, Chef Fanny guides you through the art of proper croissant dough, mixing flour, eggs, sugar, fresh yeast and milk into that iconic buttery, laminated base. It’s the kind of technique that takes years to master, but one great class to truly understand. You’ll shape and fill your dough into three beautiful bicolor creations: classic croissants, pains au chocolat with a rich chocolate filling and raisin rolls with vanilla pastry cream.
